You sacrifice a lot of modern conveniences and you will still be tracked by your cell tower, government and any online services that you can't live without. Plus, a lot of entities already have a huge profile on you unless you have been privacy conscious since like the early 2000s, which most people haven't been.

Security is one thing and privacy is another. You cannot even operate iPhone and install applications and update them if you do not provide your privet information. On the other hand with Android you can sideloading applications from open source software and repositories without having to put even your name.
